Greek yogurt muffins

Ingredients for 7/8 brioches

  • 140 gr type 2 flour

  • 60 gr brown sugar

  • 10 gr baking powder

  • 40 gr sunflower oil

  • Vanilla (aroma)

  • 110 gr vanilla Greek yoghurt

  • 1 tsp apple cider vinegar (optional)

  • 100 gr almond milk

For the chocolate ones:

  • 15 gr cocoa powder

  • 2 teaspoons of almond milk

yoghurtSift the flours into a large bowl. Combine sugar and yeast and mix with a whisk. Combine the oil, vanilla and yogurt, always stirring. Finally, add the milk and apple cider vinegar to the mixture (the latter optional) and mix all the ingredients until a homogeneous and compact mixture is obtained. Take a muffin tin, lined with paper cups and put half of the dough in "holes" (the dough must be slightly more than half). In the remaining half add the cocoa and two teaspoons of almond milk, mix and divide it into the other 4 "holes". As you like, decorate each muffin with chopped nuts or slices of dried fruit, oat flakes, cinnamon ... ..

Bake in the oven at 180oC for about 20 minutes. Always do the "toothpick" test to check the cooking.
