Sweet Cinnamon, Lemon and Coconut Balls


Ingredients for 20 balls

  • 2 cups of finely ground almond flour

  • ¼ cup of rice malt

  • 2 tablespoons of grated lemon zest

  • 1 tsp ground cinnamon

  • 1 pinch of salt

  • ¼ cup of grated coconut

Mix the almond flour, rice malt, coconut oil, grated lemon zest, cinnamon and salt in a blender. Divide the mixture into 20 pieces and form balls. Put the grated coconut on a plate and roll each ball into it. Place the balls covered with parchment paper in the refrigerator until consumed.
