Ingredients
For the biscuit
100 gr flour 00
100 gr almond flour
50 gr of cold butter in cubes
3 tablespoons dry white wine
40 gr grated pecorino
pepper
For the filling
80 gr spreadable cheese
50 gr ricotta
Chives
Chopped pistachios
Mix the two flours, combine all the ingredients and knead quickly until you get a smooth ball. Wrap it in cling film and let it rest in the fridge for at least 30 minutes. Heat the oven to 80 ° static mode. Resume the dough and form small balls (about 6 g), flatten them slightly to obtain half-spheres and place them on a baking tray lined with parchment paper. Place in the oven and cook for 15 minutes until the surface is golden. Remove from the oven and allow to cool while preparing the filling by combining the two kinds of cheese in a bowl and mixing them with a spoon. Divide the filling into two parts: in one, add the chopped pistachios; the other chopped chives. Put the fillings in two pastry bag and put a bit on one biscuit. Close with another, and press lightly to make the two biscuits adhere.
