Yoghurt Cake

Ingredients for a 24 cm cake or loaf pan

  • 125 grams of yoghurt

  • 250 grams of granulated sugar

  • 2 eggs

  • 375 grams of flour 00 (or rice flour for gluten-free)

  • 100 gr of melted butter

  • ½ teaspoon of baking soda

  • 1 sachet of vanillin

  • Powdered sugar to decorate

Preheat the oven to 170oC

Beat the eggs with the sugar with the help of a whisk or an electric mixer (the more they mount, the softer the cake will be). Add the baking soda, flour, vanilla, yoghurt and melted butter. Mix well, put into the previously greased and floured cake pan and bake for 40/50 minutes, avoiding opening the oven so as not to “disassemble” the cake.

Allow to cool and sprinkle with powdered sugar.
