Cauliflower Couscous


A fresh and fun first course for summer days, easy to make, fast and in addition gluten and lactose-free, vegan and yeast-free


Ingredients for 4 people

Soak the raisins in warm water. Wash the cauliflower tops and put them in a blender together with the almonds and parsley. Operate it at medium-high speed (with the Thermomix I go at speed 5 for 10/15 seconds) for no more than 10/15 seconds: it must take on the shape of durum wheat couscous.

Add the raisins, the cherry tomatoes cut into small cubes and season with extra virgin olive oil and salt.
