Ingredients for 4 people
900 gr floury potatoes
125 ml semi-skimmed milk
30 gr of butter
600 gr of cod cut into 4 fillets
1 clove of minced garlic
A pinch of chopped parsley
2 tablespoons of extra virgin olive oil
Salt and pepper
Cook the potatoes in a pan of hot, lightly salted water until tender. Drain them well, peel them and mash them with the appropriate tool; put them in a saucepan with the milk and butter and cook over low heat while mixing with the help of a whisk. Preheat the oven to 180oC. Arrange the cod fillets on a baking sheet - previously lined with parchment paper - brush them with oil and sprinkle them with minced garlic. Cover with the mashed potatoes and bake for 8/10 minutes. Switch the oven to the grill function and brown the crust for about a couple of minutes. Garnish with chopped parsley before serving.
