Ingredients for 4 persons
360 g of linguine
1 pack of Neapolitan or Genoese Basil
a handful of pine nuts
40 g of grated pecorino cheese
40 grams of grated parmesan cheese
garlic clove (optional)
1/2 Cup of extra virgin olive oil (EVO)
salt to taste
coarse salt for pasta
Put in the blender the basil with pine nuts, salt, and 1/3 of the oil. Blend coarsely. Add half of the grated cheeses previously. Switching the Blender by adding the oil a little at a time and the rest of the cheese until creamy.
