Zucchini and salmon rolls



Ingredients for 25/30 rolls

  • 3 large zucchinis

  • 300 grams of cream cheese

  • 200 gr of smoked salmon

  • Grated organic lemon zest

  • Extra virgin olive oil

  • Dill

  • pepper


Wash the zucchinis and cut them into very thin slices lengthwise. Cook the slices very quickly on a pan and set aside. In a bowl, mix the cheese with the chopped dill and pepper.


Spread a little cheese on the length of the courgette slices with the exception of a final cm. Arrange some strips of salmon, a pinch of grated lemon zest and roll the courgettes into a roll leaving the part without cheese and salmon closed.
