Ingredients for 4 people
1 large cauliflower cut into 2 cm thick slices
400 grams of boiled chickpeas
150 gr of barley
A few mint leaves
50 grams of coarsely chopped pistachios
1 fresh spring onion, thinly sliced
Extra virgin olive oil
1 teaspoon of cumin seeds
1 teaspoon of coriander seeds
The juice of one lemon
Salt
Boil the barley. Cut a 2cm thick slice of cauliflower and grill it on the griddle for 5 minutes on each side. When cooked, place it on the plate and garnish with boiled barley, chickpeas, coarsely chopped pistachios, fresh onion cut into thin slices, cumin and coriander seeds. Season with a few drops of extra virgin olive oil, a few drops of lemon juice and a pinch of salt.
