Trentino Salad



Ingredients for 4 people:

  • half a red cabbage

  • 200 gr boiled green soybeans (edamame)

  • 100 gr hazelnuts

  • Extra virgin olive oil

  • Salt and pepper

Cut the cabbage very finely, put it in a bowl with a pinch of salt, a few drops of vinegar, mix and let it rest for at least a couple of hours in a cool place. During this "rest" it will soften and produce a very beneficial liquid for the intestine: so do not throw it away but consume it. Add the green soybeans, very coarsely chopped hazelnuts and season with oil, a pinch of salt and black pepper.

Trentino salad variant

Cumin has a particular flavour and can be indigestible. I, therefore, recommend adding a pinch to give the salad more "character", but only after making sure that it is tolerated

Ingredients for 4 people:

  • half a white cabbage

  • 1 organic granny smith apple

  • 1 pack of mackerel in oil or natural

  • Extra virgin olive oil

  • Apple cider vinegar

  • Salt and pepper

  • A pinch of cumin seeds (optional)

Cut the cabbage very finely, put it in a bowl with a pinch of salt, a few drops of vinegar, mix and let it rest for a couple of hours in a cool place. During this "rest" it will soften and produce a very beneficial liquid for the intestine: so do not throw it away but consume it !. Add the apple cut into thin slices without removing the peel, but to do this it is essential that it comes from organic farming. Add the mackerel and season with oil, a pinch of salt, a pinch of cumin seeds, a few drops of apple cider vinegar and black pepper.
